Hungarian Chicken Tarhonya

Prep Time: 15 minutes
Cook Time: 45 minutes
Total Time: 1 hour
Servings: 4–6

Ingredients

  • 700 g chicken thighs or drumsticks
  • 300 g Hungarian egg barley (tarhonya)
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp vegetable oil or lard
  • 1½ tbsp sweet Hungarian paprika
  • 1 large tomato, chopped
  • 1 green bell pepper, chopped
  • 1 tsp salt, or to taste
  • ½ tsp black pepper
  • ½ tsp caraway seeds, optional
  • 700–800 ml chicken stock or water
  • 1 bay leaf
  • 1 tbsp tomato paste, optional
  • Fresh parsley, for serving

For Serving

  • Hungarian pickles or cucumber pickles
  • Fresh parsley
  • Crusty bread, optional

Instructions

1. Prepare the Chicken

Pat the chicken pieces dry and season them with salt and black pepper.

Heat the oil or lard in a large heavy-bottomed pot over medium-high heat. Add the chicken and brown it on all sides for about 5–7 minutes. Remove the chicken and set aside.

2. Make the Hungarian Base

In the same pot, add the chopped onion and cook for 4–5 minutes, until softened and lightly golden.

Add the garlic and cook for another 30 seconds.

Remove the pot briefly from the heat and stir in the Hungarian sweet paprika. This helps prevent the paprika from burning and becoming bitter.

Add the chopped tomato, green pepper, tomato paste, and caraway seeds if using. Stir well.

3. Cook the Chicken

Return the chicken to the pot and add the bay leaf.

Pour in approximately 500 ml of chicken stock. Cover and simmer gently for 20–25 minutes, or until the chicken is almost completely cooked and tender.

4. Toast the Tarhonya

While the chicken cooks, heat a dry skillet over medium heat. Add the tarhonya and toast it for several minutes, stirring frequently, until the little pasta pearls become golden brown.

This traditional step gives the tarhonya a deeper, nutty flavor.

5. Combine Everything

Add the toasted tarhonya to the chicken pot.

Pour in the remaining stock and stir gently. The liquid should be enough to cook the tarhonya without making the dish overly soupy.

Cover and cook over low heat for 15–20 minutes, stirring occasionally, until the tarhonya is tender and has absorbed the flavorful paprika-rich broth.

If necessary, add a small amount of hot water or stock during cooking.

6. Rest and Serve

Turn off the heat and let the dish rest, covered, for 5–10 minutes.

Remove the bay leaf, sprinkle with fresh parsley, and gently fluff the tarhonya with a fork.

Serve hot with Hungarian pickles or cucumber pickles on the side.

Recipe Tips

  • Use Hungarian sweet paprika for the most authentic flavor and color.
  • Toasting the tarhonya before cooking gives it a wonderful roasted flavor.
  • Chicken thighs are preferable because they remain juicy during slow cooking.
  • Don't boil the dish aggressively after adding the tarhonya; gentle cooking produces better texture.
  • If you like a richer version, replace the vegetable oil with lard, which is traditional in Hungarian cooking.
  • Pickles provide a delicious sour contrast to the rich, paprika-seasoned tarhonya.

What Is Tarhonya?

Tarhonya is a traditional Hungarian egg pasta made from flour and eggs. It resembles small toasted grains and is commonly served as a side dish or cooked together with meat and vegetables.

In Hungary, tarhonya is especially popular in rustic home cooking because it absorbs sauces and cooking juices beautifully.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave, adding a splash of water or stock if the tarhonya has become too dry.

Enjoy this hearty Hungarian classic with plenty of pickles and a sprinkle of fresh parsley!
